  • 1 medium yellow onion sliced thinly
  • 1 tbsp olive oil (15ml)
  • 4 oz cream cheese (115g) softened
  • 1/2 cup heavy whipping cream (120ml)
  • 1/4 cup beef broth (60ml)
  • 1 tsp kosher salt (5g)
  • 1/2 tsp black pepper (2g)
  • 1 tsp garlic powder (3g)
  • 2 cups sharp orange cheddar cheese (225g) freshly grated
  • 2 tbsp fresh green parsley (8g) chopped, for garnish

Method
 

Making the Casserole
  1. Preheat your oven to 375°F (190°C) and grab a rectangular white ceramic casserole dish. Heat the olive oil in a large skillet over medium heat. Add the sliced onions and cook for 5 minutes until translucent.
  2. Add the ground beef to the skillet. Break it apart and cook until browned and crumbled with no pink left. Drain excess grease, then season with salt, black pepper, and garlic powder.
  3. Reduce heat to low. Stir in the cream cheese, heavy whipping cream, and beef broth. Simmer and stir until a thick creamy white sauce forms and coats the meat.
  4. Transfer the beef mixture into the casserole dish and spread it into an even layer. Cover the top with a thick layer of freshly grated sharp orange cheddar cheese.
  5. Bake for 15 minutes until bubbling. Switch the oven to broil for 2 to 3 minutes until the cheese is slightly browned, crispy, and blistered at the edges.
  6. Let rest for 5 minutes. Garnish with finely chopped fresh green parsley flakes scattered evenly across the melted cheese before serving.

Notes

Always drain the fat after browning the beef so your creamy sauce stays thick.
Watch the broiler very closely to ensure the cheese blisters perfectly without burning.
