Ingredients
  

  • 1 lb lean ground beef 85/15 or 90/10 works best
  • 8 oz noodles of choice such as ramen, spaghetti, or udon
  • 4 cups broccoli florets fresh or frozen
  • 1/2 cup low-sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • 1 tbsp cold water
  • 1 tsp sesame seeds for garnish, optional

Method
 

  1. Cook noodles according to package directions. Drain and set aside.
  2. In a large skillet over medium-high heat, cook the ground beef until browned, breaking it apart with a spoon. Drain off any excess grease.
  3. Add the minced garlic and grated ginger to the skillet. Cook for 30 seconds until fragrant.
  4. Add the broccoli florets and 2 tablespoons of water to the skillet. Cover and steam for 3-4 minutes, until tender-crisp.
  5. In a small bowl, whisk together soy sauce, honey, and sesame oil. In a separate small bowl, mix the cornstarch and cold water to make a slurry.
  6. Pour the soy sauce mixture over the beef and broccoli. Stir in the cornstarch slurry and cook, stirring constantly, for 1-2 minutes until the sauce thickens.
  7. Add the cooked noodles to the skillet. Toss everything together until the noodles are fully coated in the sauce. Garnish with sesame seeds and serve immediately.

Tip 1: For extra flavor, toast the sesame seeds in a dry pan for 1-2 minutes before garnishing.
Tip 2: Don't be afraid to add other vegetables like sliced bell peppers or mushrooms along with the broccoli.
